Peri-Peri Spiced Halloumi and Aubergine Burgers

I don't know about you but I've been craving a good ol' Nandos over the past few weeks. So I wanted to try and make my own version. We've got for you a homemade spicy peri peri sauce, caramelised onions, all layered up with creamy halloumi and aubergines. Hope this hits the spot for anyone else missing one of everyone's most loved restaurants!

Preparation time: 10 minutes Cooking time: 20 minutes Feeds: 3 people Cuisine: Mediterranean


What you'll need:

  • Burger buns/ ciabatta/ bagels

  • 1 red onion, sliced

  • 1 tsp red wine vinegar (optional)

  • Sprinkle of sugar (optional)

  • 1 aubergine, cut into roughly 1cm circles

  • Homemade peri peri sauce

  • Block of halloumi, sliced quite think into roughly 6 pieces

  • Lettuce/ salad leaves

  • Salt and pepper to taste


Method:


STEP 1

Place your aubergine slices on a plate, sprinkle some salt and leave for roughly 10 minutes to allow some of the water to be released

STEP 2

In the meantime, add your red onions to a frying pan with some oil. Fry on a medium to low heat for about 5 minutes, keep stirring occasionally, allowing your onions to sweat down. Add in a sprinkle of sugar (optional), pinch of salt and red wine vinegar (optional). Cook for another few minutes until the onions are caramelised and golden



STEP 3

Heat up the grill. Pat your aubergines dry with some clean kitchen roll. Spray some olive oil on them and place on an oven try (avoiding placing them on top of each other). Place the aubergines under the grill for about 10 minutes, turning them over half way. Brush some of your homemade peri peri sauce over each of the aubergine rings on both sides. Cook for a further 2 minutes and leave to rest



STEP 4

In the meantime, heat up a griddle pan for your halloumi. (Don't worry if you don't have one, you can also just fry them for about 3 minutes on each side until there's some colour on them). Cook your halloumi on a hot griddle pan for about 3 minutes on each side



STEP 5

Cut your bagels/burger buns in half and place in the toaster or grill. Now you're ready for assembling!



STEP 6

You can layer on your burger in any way you want. Starting from the bottom, I added a layer of lettuce, then some peri peri sauce, a layer of caramelised onions, halloumi, another layer of lettuce, and finally another layer of peri peri sauce!
