Saucy Sabich Sandwich

This is an Israeli-Iraqi inspired, delicious sandwich that I hope will win over your heart. The citrusy coriander sauce (zhoug) packs a punch and goes really well with the aubergines and eggs. Hope you give this one a try!

What you'll need


  • 2 large aubergines

  • 6 eggs

  • 1-2 tbsp oil for frying

  • large handful coriander*

  • 1-2 tbsp olive oil

  • 1 tsp chilli flakes

  • 1tsp cumin

  • 1/2 squeezed lemon

  • 2 garlic cloves

  • Pitta breads/ tortilla wraps/ laffa breads**

  • 2 handfulls cherry tomatoes


*If you're not a fan of coriander, you can always use fresh mint or parsley instead


**For a carb free alternative, you could use steamed cabbage leaves or lettuce as a wrap alternative


Step 1


Cut your aubergines into circles of 1cm thickness. Place them on a plate and sprinkle some salt over them and leave for roughly 10 minutes. This will help to extract some water out of them

Step 2


Boil your eggs in a pan for roughly 10 minutes. We want them to be hard-boiled eggs for this recipe

Step 3

Now time to make our version of zhoug. To make your life easier, use a food processor for this step. If you don't have one though, a mortar and pestle will be just as good. Roughly chop your coriander and garlic. Together with olive oil, chilli flakes, salt and lemon juice, blitz all of this together for a couple of minutes so it looks like a coarse paste, something like this. Set aside in a bowl

Step 4


Using a kitchen roll, pat your aubergines dry. Now for frying. Into a large pan, add your oil of choice and allow to heat up. Place the aubergines in, making sure not to pile any of them on top of each other. Fry on each side for roughly 5-7 minutes or until they look soft and golden. Set aside in a bowl

Step 5


Cut your cherry tomatoes into quarters and set aside in a small bowl. Your eggs should now be ready after 10 minutes of boiling. Remove the shell, and cut the eggs lengthways into segments. This can also be placed into a bowl. We're all set!


Step 6


For best results, heat up your tortilla slightly either on a dry pan or in the microwave. Start layering up your ingredients- the zhoug comes first, then lay some aubergines, eggs and tomatoes on top. Put a couple of dollops of zhoug on top for good measure!

Roll it all up, cut into two and enjoy!
